{"id":24309,"date":"2023-07-17T09:50:00","date_gmt":"2023-07-17T01:50:00","guid":{"rendered":"https:\/\/resepmamiku.com\/en\/?p=24309"},"modified":"2026-03-09T20:27:39","modified_gmt":"2026-03-09T12:27:39","slug":"taiwanese-beef-noodle-soup-stirwithme","status":"publish","type":"post","link":"https:\/\/resepmamiku.com\/en\/taiwanese-beef-noodle-soup-stirwithme","title":{"rendered":"Taiwanese Beef Noodle Soup"},"content":{"rendered":"<h2>Ingredients<\/h2>\n<p>1 kg beef shank<br \/>\n2 (200g) tomato, quartered<br \/>\n2 tbsp chili bean paste<br \/>\nWheat noodles<br \/>\nBok choy<br \/>\n3-4L water<br \/>\n1\/4 cup oil<\/p>\n<h2>Aromatics<\/h2>\n<p>80g thinly sliced ginger, divided<br \/>\n5 (50g) green onion, sliced, divided<br \/>\n1 (200g) onion, sliced<br \/>\n6 star anise, divided<br \/>\n6 (30g) cloves garlic, crushed<br \/>\n2 (30g) large chili, sliced<br \/>\n4 bay leaves<\/p>\n<h2>Seasoning Sauce<\/h2>\n<p>1\/4 cup (60g) soy sauce<br \/>\n1\/4 cup (60g) dark soy sauce<br \/>\n1\/4 cup (60g) Chinese cooking wine<\/p>\n<h2>Dry Seasoning<\/h2>\n<p>60-70g rock sugar (or 3-4 tbsp white sugar)<br \/>\n1 tsp stock powder<br \/>\n1\/2 tsp white pepper<br \/>\n1\/2 tsp salt (adjust to taste)<\/p>\n<h2>Garnish<\/h2>\n<p>Chopped chillies<br \/>\nCilantro leaves<\/p>\n<h2>Steps<\/h2>\n<p>1. In a pot, Submerge beef with water along with half portion of ginger slices, green onion and star anise. Blanched for 5-10 mins, strain and rinse beef with cold running water. Discard spices, (cut beef shank into smaller pieces if your beef comes in one big piece)<br \/>\n2. Heat oil in another large pot, saute all and remaining Aromatic ingredients (except bay leaves) until fragrance, add chili bean paste and rock sugar\/white sugar, and fry for 3-5 mins until wilted and translucent<br \/>\n3. Add beef, tomatoes and seasoning sauce. Stir for 5-10 mins until beef slightly absorb the liquid<br \/>\n4. Then pour in 3L of water, add bay leaves and dry seasoning, let it boil. (If your pot is not big enough, add in water gradually)<br \/>\n5. Cover the pot, bring the heat to the lowest setting, and cook the beef low and slow for 2-3 hours or until beef is tender and soft<br \/>\n6. Cook noodle according to package, blanch bok choy for 2-3 mins and rinse with cold water for a min<br \/>\n7.
