Rinse rice until water is clear. Add water to pan. Soak 30 minutes. Bring to boil. Cover, simmer 15 minutes, remove from heat, let stand 10 minutes. Add sugar\/vinegar &amp; sesame seeds. Cool.<\/p>\n<h2>Salmon &amp; Tuna Ceviche<\/h2>\n<p>8 oz filet salmon<br \/>\n8 oz filet sushi<br \/>\n1\u20443 cup chopped cilantro<br \/>\n2 scallions, thinly sliced<\/p>\n<h2>Marinade<\/h2>\n<p>2 Tbs orange juice<br \/>\n2 Tbs Tamarind<br \/>\n2 Tbs lime juice<br \/>\n2 Tbs honey<br \/>\n2 tsp toasted sesame oil<br \/>\n2-3 tsp Siracha<br \/>\n4 Tbs Mayo<\/p>\n<h2>For Layering<\/h2>\n<p>1 lg Japanese cucumber or 2 regular<br \/>\nFurikake<br \/>\n(Japanese nori flakes, available at Whole Foods or online)<br \/>\n1 jalapen\u0303o<br \/>\n1 lg Florida or 2 Hass avocados<\/p>\n<h2>Directions<\/h2>\n<p>1. Freeze fish 15 minutes to slice easier. Cut into 3\u20444 inch cubes.<br \/>\n2. Mix all marinade ingredients, toss in fish &amp; cilantro<br \/>\n3. Grease Bundt pan. Place half of rice in bottom and press in.<br \/>\n4. Arrange the cucumbers over the rice<br \/>\n5. Drain excess liquid from the fish. Place the fish evenly over the cucumbers.<br \/>\n6. Top with avocado slices. 6. Top with rice. Press rice down firmly<br \/>\n7. Use a small spatula to loosen the rice around the edges before inverting.<br \/>\n8. Place plate on top of Bundt pan. Invert. 9.
