{"id":24128,"date":"2023-07-07T11:30:00","date_gmt":"2023-07-07T03:30:00","guid":{"rendered":"https:\/\/resepmamiku.com\/en\/?p=24128"},"modified":"2026-03-09T20:28:12","modified_gmt":"2026-03-09T12:28:12","slug":"minestrone-soup-normasfooddiary","status":"publish","type":"post","link":"https:\/\/resepmamiku.com\/en\/minestrone-soup-normasfooddiary","title":{"rendered":"Minestrone Soup"},"content":{"rendered":"<h2>Ingredients<\/h2>\n<p>4 tablespoons extra-virgin olive oil<br \/>\n1 medium onion, chopped<br \/>\n2 medium carrots, peeled and chopped<br \/>\n2 medium ribs celery, chopped<br \/>\n1\u20444 cup tomato paste<br \/>\n1 large potato, diced<br \/>\n4 cloves garlic, pressed or minced<br \/>\n1\u20442 teaspoon dried oregano<br \/>\n1\u20442 teaspoon dried thyme<br \/>\n1 large can diced tomatoes (800g)<br \/>\n1 litre chicken Stock<br \/>\n800ml vegetable stock<br \/>\nSalt to taste<br \/>\n2 bay leaves<br \/>\n1\u20442 teaspoon chilli flakes (add more foe a spicier soup)<br \/>\nFreshly ground black pepper<br \/>\n1 cup orecchiette pasta<br \/>\n1 can cannellini beans<br \/>\n2 cups of baby spinach or chopped kale<br \/>\nFreshly grated Parmesan cheese, for garnishing (optional)<\/p>\n<h2>Steps<\/h2>\n<p>Warm olive oil in a large pot over medium heat. Once the oil is simmering, add the chopped onion, carrot, celery, tomato paste, and a pinch of salt. Cook, stirring often, until the vegetables have softened and the onions are turning translucent, about 7 to 10 minutes.<br \/>\nAdd the potato, garlic, oregano, and thyme. Cook until fragrant while stirring frequently, about 2 minutes.<br \/>\nPour in the diced tomatoes and their juices, broth, stock, and water. Add salt, bay leaves, and chilli flakes. Season generously with freshly ground black pepper.<br \/>\nRaise heat to medium-high and bring the mixture to a boil, then partially cover the pot with the lid, leaving about a 1\u201d gap for steam to escape.
