{"id":24097,"date":"2023-07-06T15:40:00","date_gmt":"2023-07-06T07:40:00","guid":{"rendered":"https:\/\/resepmamiku.com\/en\/?p=24097"},"modified":"2026-03-09T20:28:17","modified_gmt":"2026-03-09T12:28:17","slug":"mango-chicken-curry-anexplorerskitchen","status":"publish","type":"post","link":"https:\/\/resepmamiku.com\/en\/mango-chicken-curry-anexplorerskitchen","title":{"rendered":"Mango Chicken Curry"},"content":{"rendered":"<h2>Ingredients<\/h2>\n<p>2 Tbs coconut oil<br \/>\n1 lg red onion, chopped<br \/>\n1 red pepper, chopped<br \/>\n1 red pepper, thinly sliced<br \/>\n2-3 Tbs red curry paste<br \/>\n2 Tbs garlic, chopped<br \/>\n2 Tbs freshly grated ginger<br \/>\n2 tsp each ground coriander &amp; yellow curry powder<br \/>\n1\u20442 tsp ground cumin<br \/>\n2 1\u20442 cups chopped mango, divided<br \/>\n1 1\u20442 can (20 oz) coconut milk, full fat<br \/>\n3\u20444 cup ice<br \/>\n1 1\u20442 lb chicken thighs or breasts<br \/>\n1 1\u20442 cup peas<\/p>\n<h2>To Garnish<\/h2>\n<p>Fresh limes, Cilantro leaves, Mango slices<\/p>\n<h2>For Vegan<\/h2>\n<p>Delete chicken, substitute chickpeas and cashews. We are nut free, but they are delicious<\/p>\n<h2>Directions<\/h2>\n<p>1. Heat oil in skillet. Add onions &amp; chopped peppers, reserve red pepper slices. Saute\u0301 over low heat about 10 minutes.<br \/>\n2. Add garlic, curry paste &amp; ginger. Saute\u0301 1 minute. Adjust curry paste to the level of spice you like. Pour in coconut milk, add 1 cup mangoes (reserve 1 1\/2 cups mango) Add all the spices &amp; simmer 3 minutes on low.<br \/>\n3. Pour all into blender. Add ice. If you do not have a soup setting, then the blender could explode from the steam, this is why we add ice. Wait for mixture to cool about 10-15 minutes. Instead of top, use a paper towel covered with your hand. Blend until smooth<br \/>\n4. Pour blended mixture back into fry pan. Add cubed chicken (we prefer thighs) Add red pepper slices.<br \/>\n5. Simmer 15 minutes covered. Stir often, scraping bottom, Add peas. Simmer 5 minutes. Add water if getting too thick.<br \/>\n6. Stir in reserved mangoes before serving. Add optional lime juice by squeezing 1-2 limes or let guests do themselves. If your going Vegan, just delete the chicken, add chickpeas, simmer 10 minutes total, top with cashews<br \/>\n7. Sprinkle with cilantro &amp; serve with rice.
