For the masala, Mix chopped coriander with turmeric, Coriander Jeera Powder, Salt and Cooking Oil.<br \/>\n2. Create a slit halfway in the potatoes and aubergine and stuff massalo in each one between the slit.<br \/>\n3. In a pot heat 8 table spoons on high heat. Add mustard seeds, let it pop and add Jeera seeds and once it\u2019s starts sizzling add the stuff Aubergine\/potatoes stirring gently covering with a lid for 2 minutes on high heat.<br \/>\n4. Add blended tomato can. Any excess tomato in the can add 150ml of water adding that into the curry. Add puree mixing well.<br \/>\n5. Cover for 2 minutes and stir well. Then add ground peanuts and stir again gently.<br \/>\n6. Let the curry simmer on very slowly heat for almost 40 minutes stirring every 10 minutes until the potatoes are cooked through and soft<br \/>\n7.
