Don&#8217;t overcook. Lay potatoes 1 inch apart on a baking tray. Mash or press them down using a flat cup, glass, or potato masher.<br \/>\nDrizzle olive oil over. Mix the spices together and sprinkle over the potatoes. Grill in oven for 20-25 minutes on 200 C. Add Parmesan cheese and bake for 5 minutes more.
