Parboil the potatoes for 14 minutes<br \/>\n2. Heat oil up on medium heat adding in the chopped leek. It\u2019ll seem like a lot but it will completely reduce and all the water will release. At that point turn the heat to high to reduce majority of the water.<br \/>\n3. Once the release water has reduced set the leek aside. Use up this leek juice making a roux. On medium heat melt in the butter then add in the plain flour whilst slowly stirring. Once it becomes like wet sand gradually add in the milk and keep stirring until the consistency is like a thick cheese sauce.<br \/>\n4. Add in the garlic, bay leaf, chilli, cumin, turmeric, salt, pepper, curry powder, mustard and cheese. Mix really well until the cheese is completely melted.<br \/>\n5. Add in onions, cooked leek, parboiled potatoes into the cheese sauce. Transfer over to a baking dish. Cover with the puff pastry sheet slightly pressing down so the sheet is laying perfectly on top of the filling. Cut off excess edges and create ridge marks with a fork.<br \/>\n6.
