Omelette egg: Combine water and rice flour, mix well<br \/>\n2. Crack eggs in, and beat with a pinch of salt, then add sausage (if using)<br \/>\n3. Heat generous amount of oil in a pan, pour all the egg mixture into the hot oil and fry over medium heat until golden brown and crispy on both sides, approx 3-5 mins. (Slowly and gently flip the omelette using spatulas). Remove from heat<br \/>\n4. Sauce: heat oil, over high heat, saute garlic and onion briefly until fragrance, add in tomato and stir fry until just wilted<br \/>\n5. Lower the heat, Add the sauce mixture and let simmer and thicken<br \/>\n6.
