Cook the chicken until chicken is golden on both sides, set aside. Add garlic to the skillet, cook for one more minute, then stir in 1\/4 cup chicken stock. Bring to a boil, then add rice and the rest of the stock. Let it boil than cover and simmer for 15-20 minutes, until rice is cooked and completely tender. Stir in heavy cream and parmesan. Adjust seasoning with salt and pepper and serve the creamy parmesan chicken and rice immediately, sprinkled with fresh chopped parsley and more parmesan.
