{"id":22789,"date":"2023-05-17T06:49:00","date_gmt":"2023-05-16T22:49:00","guid":{"rendered":"https:\/\/resepmamiku.com\/en\/?p=22789"},"modified":"2026-03-09T20:30:17","modified_gmt":"2026-03-09T12:30:17","slug":"chicken-cooked-in-coconut-milk-stirwithme","status":"publish","type":"post","link":"https:\/\/resepmamiku.com\/en\/chicken-cooked-in-coconut-milk-stirwithme","title":{"rendered":"Chicken Cooked In Coconut Milk"},"content":{"rendered":"<h2>Ingredients<\/h2>\n<p>1 whole (1 kg) chicken cut into 10-12 pieces<br \/>\n200ml instant coconut cream<br \/>\n250gr fresh grated coconut or 120g dried<br \/>\n3 pieces cloves<br \/>\n1 cinnamon stick (10cm)<br \/>\n2 tsp coriander powder<br \/>\n1-2 tbsp palm sugar or brown<br \/>\n1 tsp salt (adjust to taste)<br \/>\n2 tsp sugar<br \/>\n1\/2 tsp white\/black pepper<br \/>\n500ml air<br \/>\n1\/4 cup neutral oil<br \/>\nCrispy Fried shallot (optional)<\/p>\n<h2>Spices Paste<\/h2>\n<p>3 garlic<br \/>\n10 shallot<br \/>\n35g ginger<br \/>\n35g galangal<br \/>\n40g Kaempferia galangal or blue ginger<\/p>\n<h2>Steps<\/h2>\n<p>1. Dry toast grated coconut, over medium low heat, stir and toss frequently until golden brown and fragrant. Let cool and blend until smooth. Set a side<br \/>\n2. Blend spices paste until smooth and pasty<br \/>\n3. Heat oil in a pan, stir fry spices paste until darken in color for 3-5 mins over medium high heat then add cinnamon stick, coriander powder, cloves, palm sugar, stir for another min<br \/>\n4. Add chicken pieces and water, let it bubble.<br \/>\n5. Lower the heat and cook chicken for 15 mins<br \/>\n6. Add coconut cream and seasoning, cook chicken for another 10-15 mins. Stir frequently<br \/>\n7. Lasty add toasted coconut, and stir until sauce thicken.
