{"id":22121,"date":"2023-05-07T11:31:00","date_gmt":"2023-05-07T03:31:00","guid":{"rendered":"https:\/\/resepmamiku.com\/en\/?p=22121"},"modified":"2026-03-09T20:30:57","modified_gmt":"2026-03-09T12:30:57","slug":"yakhni-pulao-kitchen_flavors_by_sana","status":"publish","type":"post","link":"https:\/\/resepmamiku.com\/en\/yakhni-pulao-kitchen_flavors_by_sana","title":{"rendered":"Yakhni Pulao"},"content":{"rendered":"<h2>Ingredients For Spice Bag<\/h2>\n<p>Whole Coriander Seeds 2 tbl.sp<br \/>\nFennel Seeds 2 tbl.sp<br \/>\nCinnamon Sticks 2 piece<br \/>\nStar Anise Flower 3<br \/>\nGreen Cardamom 6<br \/>\nBlack Cardamom pod 1<br \/>\nCloves 1\/2 tsp<br \/>\nBlack Peppercorns 1 tsp<br \/>\nBay Leaves 3<br \/>\nPouch or Piece of Muslin Cloth to make Spice Bag<br \/>\n**Add whole spice in pouch and tie up tightly.<\/p>\n<h2>Pulao Stock<\/h2>\n<p>Beef \/ Mutton 750 gm<br \/>\nWater 2 litres<br \/>\nGarlic peeled Whole Bulb<br \/>\nOnion 1 medium cut into 4 pieces<\/p>\n<h2>Ingredients For Pulao<\/h2>\n<p>Oil 1\/2 cup<br \/>\nOnions 3 medium thinly sliced<br \/>\nWhole Cumin Seeds 1 tsp<br \/>\nGinger Garlic paste 1 tbl.sp<br \/>\nGreen Chili paste 1 tsp<br \/>\nYogurt 1 cup<br \/>\nBasmati Rice 2 cups soaked as per packet instructions<br \/>\nMace, nutmeg, cardamom powder 1\/4 tsp<\/p>\n<h2>Steps<\/h2>\n<p>1. Add Beef or Mutton in deep pan along with 2 litres water, garlic cloves, onion , salt and spice bag.<br \/>\n2. Let the boil come on high flame, then cover the pan with lid on slow flame and let it cook until meat<br \/>\ntender.<br \/>\n3. Once meat tender discard the spice bag and strain the stock and set aside for later use.<br \/>\n4. Now in a separate pan add 1\/2 cup oil, once oil heated add onion and saute until slightly brown.<br \/>\n5. Now add in cumin seeds, ginger garlic and green chili paste. Saute on medium high flame until aroma<br \/>\ncomes off.<br \/>\n6. Add pre boiled meat in pan and saute for a minute then add well whisked yogurt in pan and roast until<br \/>\nyogurt moisture dries-up and oil separate from oil.<br \/>\n7. Then Add rice and prepared Yakhni in pan , Yakhni level should be only 1 inch up from rice,<br \/>\nthis is the key of perfectly cooked rice.<br \/>\n8. Sprinkle mace, nutmeg and green cardamom powder in rice and let it cook on high flame.<br \/>\n9. Once rice start boiling check salt and adjust according to your taste.<br \/>\n10.
