Add the melted butter and process till everything is combined. Press evenly in a small rectangle tray lined with baking paper @supamama_sa Then set aside.<br \/>\nIn a seperate bowl whip the cream to stiff peaks. Whisk together the cream cheese and icing sugar using a had held whisk (this will make it easy to mix in to the whipped cream). Slowly fold in the cream cheese and whipped cream with blueberry essence just until well combined. Spread this mixture evenly over the prepared biscuit base.<br \/>\nFreeze overnight. Or chill in the fridge.<br \/>\n<strong>Note:<\/strong> I find freezing is better that way you get a clean cut. Let it come to room temperature if you don&#8217;t like to serve it frozen.<br \/>\nDecorate as desired.
