{"id":21955,"date":"2023-04-30T15:06:00","date_gmt":"2023-04-30T07:06:00","guid":{"rendered":"https:\/\/resepmamiku.com\/en\/?p=21955"},"modified":"2026-03-09T20:31:29","modified_gmt":"2026-03-09T12:31:29","slug":"mini-lemon-curd-tarts-ataleofsauceandspice","status":"publish","type":"post","link":"https:\/\/resepmamiku.com\/en\/mini-lemon-curd-tarts-ataleofsauceandspice","title":{"rendered":"Mini Lemon Curd Tarts"},"content":{"rendered":"<h2>Ingredients<\/h2>\n<p><em><strong>For the base:<\/strong><\/em><br \/>\n1 cup oats<br \/>\n1 cup almonds ground<br \/>\n3\u20444 cup dates (pitted then measured)<br \/>\n2 Tablespoons melted coconut oil\/butter<br \/>\n<em><strong>For the Lemon curd:<\/strong><\/em><br \/>\n1 cup coconut milk<br \/>\n1\u20442 cup freshly squeezed lemon juice<br \/>\n1 cup sugar<br \/>\n2 Tablespoons cornflour<br \/>\nPinch of salt<br \/>\n2 Tablespoons solid coconut oil\/butter<br \/>\n2 @tetleyteasa lemon green tea (tea bags)<br \/>\nFew drops yellow food colouring<\/p>\n<h2>Method<\/h2>\n<p><strong>For the base:<\/strong><br \/>\nGround the almonds and oats in a food processor then set aside.<br \/>\nAdd the pitted dates and melted coconut oil\/butter in the food processor and processes till you get a lump consistency.<br \/>\nThen add half of the oats and almonds mixture and pulse to combine.<br \/>\nAdd the remaining ground almonds and oats. Pulse till everything is well incorporated and comes in to a dough ball.<br \/>\nTake two parchment papers\/cling wrap. Then roll the prepared dough between two parchment papers using a rolling pin.<br \/>\nCut in to desired shape or size using a cookie cutter.<br \/>\nLine a cupcake pan with parchment paper\/cling wrap. Carefully lift the cut base and press them in the cupcake tray. Let them sit in the freezer while you prepare the lemon curd.<br \/>\n<strong>For the Lemon Curd:<\/strong><br \/>\nTake 1\u20442 cup coconut milk in a microwave safe bowl add two lemon tea bags inside and microwave for 30 seconds. Remove from the microwave.<br \/>\nRemove the tea bags squeezing all the extract well. Add all of the ingredients for the curd to a saucepan along with the lemon tea infused coconut milk.<br \/>\nCook on medium heat stirring constantly till it gets thick. Once thick remove from stove. Let cool slightly to room temperature then pour in to prepared almond base.<br \/>\nLet it set in the Fridge for a few hours.
