Pour hot cream over the chocolate and let it sit for 5 minutes then stir till you have a smooth ganache. Let it chill in the fridge for a few minutes till it gets slightly thick while you prep the cream and cookies.<br \/>\nProcess the choc chip cookies in a food processor till you have fine crumbs. Add Melted butter and process till well combined. Adding butter gives it a rich flavour and holds the crumbs together.<br \/>\nWhip cream to soft peaks not too soft as well. Slightly stiff peaks work fine. Must not be pourable.<\/p>\n<h2>To Assemble<\/h2>\n<p>In a serving dish layer the dessert by spreading a thin layer of whipped cream at the base followed by cookie crumbs and a generous layer of whipped cream topped with a layer of chocolate ganache.<br \/>\nEven out all the layers as you go. Repeat layers ending with a cream and ganache layer on top.<br \/>\nDecorate as desired with chopped nuts\/chocolate shavings. Chill in the fridge preferably overnight or at least 3 to 4 hours.<br \/>\nChilling time allows the cookies to soften giving it a moist and soft cake texture to the final dessert.
