{"id":21817,"date":"2023-04-27T09:20:00","date_gmt":"2023-04-27T01:20:00","guid":{"rendered":"https:\/\/resepmamiku.com\/en\/?p=21817"},"modified":"2026-03-09T20:31:37","modified_gmt":"2026-03-09T12:31:37","slug":"cherry-cream-pistachio-cake-ataleofsauceandspice","status":"publish","type":"post","link":"https:\/\/resepmamiku.com\/en\/cherry-cream-pistachio-cake-ataleofsauceandspice","title":{"rendered":"Cherry Cream Pistachio Cake"},"content":{"rendered":"<h2>Ingredients<\/h2>\n<p>11\u20442 cups cake flour<br \/>\n85g pistachios raw unsalted @werconboerdery<br \/>\n11\u20442 teaspoons baking powder<br \/>\n1\u20444 teaspoon salt<br \/>\n115g softened butter (1\u20442 cup)<br \/>\n3\u20444 cup sugar<br \/>\n2 large eggs (room temperature)<br \/>\n1 teaspoon vanilla extract<br \/>\n1\u20442 teaspoon almond extract<br \/>\n1\u20442 cup milk (room temperature)<br \/>\nFew drops green food colouring<br \/>\n3\u20444 cup cherry coulis (1\u20444 cup for the whipped cream and 1\u20442 cup to use inbetween the layers)<\/p>\n<h2>Method<\/h2>\n<p>Preheat oven to 300 degrees F (150C) (lower temperature makes for a smaller hump on top of the cake).<br \/>\nGrease, and add parchment paper to around 7 inch round baking pan, set aside.<br \/>\nIn medium bowl add the flour, ground pistachios, salt, baking powder, stir, set aside.<br \/>\nIn bowl of mixer cream the butter and sugar until light and fluffy, about 3 minutes.<br \/>\nAdd in the eggs 1 at a time, continue mixing.<br \/>\nAdd in the extracts, continue mixing.<br \/>\nWith mixer on low add the flour mixture and milk by alternating each. Mix until fully combined.<br \/>\nPour batter evenly into the prepared cake pan.<br \/>\nBake 25-30 minutes (rotating cake pan half way through) or until toothpick inserted comes out clean.<\/p>\n<h2>Cherry Cream<\/h2>\n<p>11\u20442 cup whipping cream<br \/>\n1\u20444 cup Icing sugar<br \/>\n1\u20443 cup cherry coulis<\/p>\n<h2>Method<\/h2>\n<p>Whip the cream to soft peaks. Add the Icing sugar and whip till you have stiff peaks add the cherry puree and fold gently to combine.<br \/>\n(You may add the cherry puree with the Icing sugar as well but if you&#8217;re not using the right whipping cream you might have trouble getting stiff peaks).<\/p>\n<h2>To Assemble<\/h2>\n<p>Cool cakes completely and slice in to half.<br \/>\nPlace a piece of the cut cake on a cake board. Add some cherry whipped cream. Smooth it out using an off set spatula. Drizzle some cherry coulis over the cream. (Don&#8217;t add too much or else your cake might collapse.)<br \/>\nAdd the 2nd piece of cake and top with cream and cherry puree repeat layers till you have a full cake stacked. Do a light crumb coat. Chill for 1 hour. Then add a final layer of whipped cream and decorate as desired.
