{"id":21560,"date":"2023-04-15T09:11:00","date_gmt":"2023-04-15T01:11:00","guid":{"rendered":"https:\/\/resepmamiku.com\/en\/?p=21560"},"modified":"2026-03-09T20:31:59","modified_gmt":"2026-03-09T12:31:59","slug":"strawberry-cheesecake-tacos-ataleofsauceandspice","status":"publish","type":"post","link":"https:\/\/resepmamiku.com\/en\/strawberry-cheesecake-tacos-ataleofsauceandspice","title":{"rendered":"Strawberry Cheesecake Tacos"},"content":{"rendered":"<h2>Ingredients<\/h2>\n<p><strong>Taco shells:<\/strong><br \/>\n20 mini tortillas<br \/>\n1\u20442 cup melted butter<br \/>\n1 pack lemon cream biscuits @henrobiscuits (biscuits crumbs only)<br \/>\n2 Tablespoons sugar<br \/>\n<strong>Cheesecake filling:<\/strong><br \/>\nCream from the lemon cream biscuits @henrobiscuits<br \/>\n150g soft cream cheese (room temperature)<br \/>\n1 cup full cream whipped to medium peaks<br \/>\nFew drops Strawberry essence<br \/>\n2 tablespoons condensed milk<br \/>\n<strong>Macerated Strawberries:<\/strong><br \/>\n1\u20442 cup chopped Strawberries<br \/>\n1 tablespoon lemon juice<br \/>\n2 tablespoons sugar<br \/>\n<em>***Mix everything and let it sit in the fridge till ready to serve.<\/em><\/p>\n<h2>Method<\/h2>\n<p>1. Separate the lemon cream biscuits in two bowls (cream and biscuits).<br \/>\nCrush the biscuits lightly in a zip lock bag using a rolling pin. Don&#8217;t crush it too fine. The big bits gives it a delicious crunchy texture. Add sugar mix and remove in a shallow plate\/bowl.<br \/>\n2. Brush each tortilla on both sides with butter and coat generously with the biscuits crumbs pressing gently.<br \/>\n3. Fold the tortillas in half like a taco shell and place between a rack or on an upside down cupcake tray. Then bake in a preheated oven at 180C for 8 minutes or until golden brown. Remove from oven and let it cool completely in the rack\/cupcake tray.<br \/>\n4. Prepare the cheesecake filling by mixing the cream cheese and the lemon cream (cream from biscuits) till well combined. Then fold in the whipped cream and condensed milk and strawberry essence.<br \/>\nFill in a piping bag fitted with a star nozzle.<br \/>\n5. Pipe a generous amount of the cheesecake filling in the taco shells top with macerated strawberries. Dust with Icing sugar and serve chilled.<\/p>\n<h2>Notes<\/h2>\n<p>When the taco shells are golden brown remove from the oven. They might still be slightly soft. Just let them cool completely in the rack.
