Combine all ingredients for the dressing and whisk or shake well until emulsified<br \/>\n2. Peel one cucumber. Chop both cucumbers into small cubes. Slice cauliflower florets into thin slices<br \/>\n3. Place chickpeas, cucumbers, cauliflower, parsley and dates into serving bowl. Pour dressing over mixture. Mix well. Fold in cheese cubes. Adjust salt and pepper to taste.<br \/>\n4.
