{"id":19858,"date":"2023-03-31T07:30:00","date_gmt":"2023-03-30T23:30:00","guid":{"rendered":"https:\/\/resepmamiku.com\/en\/?p=19858"},"modified":"2026-03-09T20:32:45","modified_gmt":"2026-03-09T12:32:45","slug":"crispy-panjabi-veg-samoosas-ataleofsauceandspice","status":"publish","type":"post","link":"https:\/\/resepmamiku.com\/en\/crispy-panjabi-veg-samoosas-ataleofsauceandspice","title":{"rendered":"Crispy Panjabi Veg Samoosas"},"content":{"rendered":"<h2>Ingredients Filling<\/h2>\n<p>3 large Boiled potatoes<br \/>\n1 large carrot chopped finely<br \/>\n1 medium green pepper chopped finely<br \/>\n1 tablespoon oil<br \/>\n1 teaspoon cumin seeds<br \/>\n1 medium-sized onion chopped<br \/>\n1 Pinch asafoetida (hing)<br \/>\nFew curry leaves<br \/>\n2 teaspoons fennel seeds<br \/>\n1-2 freshly chopped Green chillies<br \/>\n1\u20442 teaspoon turmeric<br \/>\n1 teaspoon kashmiri red chilli powder<br \/>\n1 teaspoon ground cumin powder<br \/>\n1 teaspoon ground coriander powder<br \/>\nSalt and crushed pepper to taste<br \/>\n1 tablespoon fresh lemon juice<br \/>\n2 teaspoons dry mango powder (add less If you like)<br \/>\n2 handfuls freshly chopped coriander<\/p>\n<h2>Method<\/h2>\n<p>Prepare the filling:<br \/>\nPeel and boil potatoes then mash lightly don&#8217;t make it smooth keep bits n chunks.<br \/>\nIn a nonstick pot heat oil add cumin seeds along with chopped onions and fry till soft and translucent. Add curry leaves and fennel seeds, saute\u0301 for a minute or two then add all of the spices along with the chopped carrot, green pepper and a splash of water and cook till carrots are slightly soft. Then add the mashed potatoes and lemon juice and mix well till everything is well incorporated. Adjust seasoning as per your liking. Remove from heat and let it cool completely. Once cooled mix in freshly chopped coriander and use to fill samoosas.<\/p>\n<h2>Ingredients For Dough<\/h2>\n<p>11\u20444 cup all-purpose flour<br \/>\n11\u20444 cup corn flour<br \/>\n1 teaspoon salt<br \/>\n1 teaspoon carom seeds (ajwai)<br \/>\n2 1\u20442 tablespoons melted ghee<br \/>\n2 1\u20442 tablespoon oil<br \/>\n1 cup or more hot water<\/p>\n<h2>Method<\/h2>\n<p>In a bowl add all the dry ingredients and mix well. Then rub in the oil and ghee well. When you hold the flour in your hands and make a fist it should be able hold its shape slightly yet get loose when moved around.<br \/>\nPour in hot water gradually mix and make a firm yet tacky dough. Cover with a damp and let it rest for 25-30 minutes.<br \/>\nDivide dough into equal portions and roll into balls. Then flatten each dough ball and roll it to a saucer size oval disc. (Note: You may roll I to a circle too I prefer to keep an oval shape to have a deeper space in the samoosa for the filling). Fill and use your fingers to apply water to secure the ends.
