Preheat oven to 200c. In a large bowl combine prepared capsicum, Sweet potato, onion and mushrooms and toss in olive oil and sea salt. Spread in a single layer on a lined tray and roast for 20-30 minutes until golden and tender.<br \/>\n2 Heat brown rice in the microwave according to packet instructions.<br \/>\n3. Combine the dressing ingredients, mixing well and seasoning well with salt and pepper to taste.<br \/>\n4. Toss rice and pan-roasted vegetables together with the dressing.
