Chicken: hydrate potato starch by mixing it with water, let sit for 30 mins to 1 hr<br \/>\n2. Meanwhile, marinate chicken with soy sauce, salt and pepper for 30 mins<br \/>\n3. When the water and starch separates, pour out all of the water, then add in egg white and oil, mix well<br \/>\n4. Coat chicken pieces with potato starch mixture evenly<br \/>\n5. And fry them into the hot oil over medium heat until slightly golden, (fry them in batches)<br \/>\n6. Double fry chicken over high heat for 1 min, until golden brown and crispeehhh (again in batches)<br \/>\n7. Sweet Sour Sauce: heat oil, and toss bell pepper, onion, carrot for a few secs then add in the sauce mixture and pineapple<br \/>\n8.
