{"id":18656,"date":"2023-03-01T11:45:00","date_gmt":"2023-03-01T03:45:00","guid":{"rendered":"https:\/\/resepmamiku.com\/en\/?p=18656"},"modified":"2026-03-09T20:34:12","modified_gmt":"2026-03-09T12:34:12","slug":"mexican-rice-insidereereeskitchen","status":"publish","type":"post","link":"https:\/\/resepmamiku.com\/en\/mexican-rice-insidereereeskitchen","title":{"rendered":"Mexican Rice"},"content":{"rendered":"<h2>Ingredients<\/h2>\n<p>500g mince meat<br \/>\n1\/2 tsp cayenne pepper<br \/>\n11\/2 tbsp dried oregano<br \/>\n3 tsp cumin<br \/>\n3 tsp coriander<br \/>\n3 tsp onion powder<br \/>\n2 tsp paprika<br \/>\nSalt<br \/>\n3 garlic cloves , minced<br \/>\n1\/3 cup tomato paste<br \/>\n1 1\/4 cup long grain rice<br \/>\n2.5 cups chicken broth<br \/>\n1 can corn kernels, drained<br \/>\n1 can black beans, drained<br \/>\n1 capsicum red diced<br \/>\n1 large onion<br \/>\n2 tbsp olive oil<br \/>\n2 cups Mozeralla cheese<\/p>\n<h2>Instructions<\/h2>\n<p>In a large pot heat oil over high heat. Add mince meat and cook until it changes colour.<br \/>\nAdd onion, cook until soft than add garlic and cook for 1 minute. Add capsicum and cook for 2 minute.<br \/>\nAdd all spices and add tomato paste and mix. Add rice and mix than add chicken broth, stir to mix in.<br \/>\nAdd corn and black beans. Stir, bring to simmer then cover and lower heat to medium low. Cook for 15 minutes or until the rice is cooked.<br \/>\nRemove lid, quickly stir through half the cheese. Smooth top then sprinkle on remaining cheese.<br \/>\nCover and leave for 1-2 minute or until the cheese melts.<br \/>\nRemove from stove and serve immediately.
