Add 1 tablespoon oil than add eggs to skillet.<br \/>\nCook, stirring to form large soft curds, about 30 seconds.<br \/>\nTransfer to a plate and set it aside.<br \/>\nReturn skillet to high heat and add 1 tablespoons oil, cook add onion and cook for few minutes or until the onion is soften, add garlic and ginger and cook, stirring, until fragrant, 1 minute.<br \/>\nAdd your frozen veggies and add salt cook for 2-3 minutes stirring occasionally.<br \/>\nAfter 3 minutes start adding rice and stir to combine.<br \/>\nAdd your green onions than add the cooked eggs to skillet.<br \/>\nPour in soy sauce and sesame oil and cook, stirring until heated through, 1 minute.
