\n115g of sugar
\n300mls thickened cream
\n450g mascarpone cheese
\nCoffee mixed with water (for dipping )
\nLady fingers biscuits (can get from Coles)
\nCoco powder for dusting
\nChocolate shavings for garnishing<\/p>\n
First boil Water In a pot on the stove and place a glass bowl on top of the boiling water to create a double boiler.
\nIn the glass bowl add the egg yolks and sugar and whisk till sugar has dissolved and mixture is creamy.
\nTake off the stove and add in thickened cream and whisk till combined well and then add half of the mascarpone cheese and whisk till combined then add the rest of the mascarpone cheese and whisk till all thick and creamy.
\nIn a separate bowl, using a electrical whisk, whisk the egg whites till fluffy and thick.
\nPour the mascarpone cheese mixture into the egg whites and fold all together gently till combined well.<\/p>\n
Dip ladyfingers very quickly (less than a second) into the coffee water and line them in one layer in an baking dish\/ serving dish .
\nIf necessary, break a few ladyfingers to fit them in the dish.
\nSpoon half of the cream cheese filling over the ladyfingers and smooth the top. Repeat with a second layer of coffee-dipped ladyfingers, then with the rest of the cream.
\nDust with coco powder and chocolate shavings or you can do it just before serving.
