Leftover sushi rice works best but I had normal left over rice which works fine. Add to the rice the soya sauce, rice wine vinegar, sugar and cornflour mixing well<br \/>\n2. Heat a generous amount of oil to shallow fry on medium<br \/>\n3. Used a ladle, slightly oil the inner dip and put a good amount of the rice mixture pressing it down creating a dome shape which is tightly packed of rice<br \/>\n4. Place each rice patties on to the hot oil shallow frying for 2 minutes on each side or until crispy golden brown<br \/>\n5. In the mean time smash avocado up and in a separate bowl add the vegan Mayo with sriracha sauce mixing until combined<br \/>\n6. Place your rice cracker on some tissues to drain the oil<br \/>\n7.
