{"id":18214,"date":"2023-02-16T12:22:00","date_gmt":"2023-02-16T04:22:00","guid":{"rendered":"https:\/\/resepmamiku.com\/en\/?p=18214"},"modified":"2026-03-09T20:35:35","modified_gmt":"2026-03-09T12:35:35","slug":"chapli-kabab-thebukharigirls","status":"publish","type":"post","link":"https:\/\/resepmamiku.com\/en\/chapli-kabab-thebukharigirls","title":{"rendered":"Chapli Kabab"},"content":{"rendered":"<h2>Ingredients<\/h2>\n<p>500 gram ground beef<br \/>\n1\/2 red onion, very finely chopped<br \/>\n2 green onions finely chopped<br \/>\n2 green chili peppers, finely chopped<br \/>\n1\u20444 cup cilantro, finely chopped<br \/>\n1 tomato, very finely diced<br \/>\n3 Tbsp corn flour or gram flour<br \/>\nOil for frying<\/p>\n<h2>Spice Mix<\/h2>\n<p>5-6 dry red chili<br \/>\n2 Tbsp coriander seeds<br \/>\n1 tbsp cumin seeds<br \/>\n1\/4 tsp carom seeds<br \/>\n1 tbsp pomegranate seeds<br \/>\n1 tbsp dry fenugreek leaves<br \/>\n1 1\u20442 tsp salt, or to taste<\/p>\n<h2>Method<\/h2>\n<p>Add all the ingredients in a spice grinder or mortar and pestle. Pulse to roughly grind 4-5 times.<br \/>\nIn a bowl, add the ground beef along with the red onion, green onion, green chili pepper, cilantro and tomatoes. Add the spice mix with salt and knead for 3-4 minutes, until you begin to see a lacy, stringy texture of the meat. The mixture should be homogenous instead of crumbly.<br \/>\nCover and set aside or refrigerate up to 24 hours.<br \/>\nHeat a cast iron skillet over high heat. Add enough oil to generously cover the bottom of the skillet.<br \/>\nUsing oiled hands, take around 1\/4 cup heaped of the meat and form into a round shape.<br \/>\nUse your hands to shape the patties. Place on hot pan.\u2028Fry for 2 minutes on each side.
