For the cheese sauce, blitz together the cashew nuts, nutritional yeast, mustard and gradually start off with less hot water until you get a sauce like consistency<br \/>\n2. Add some oil to a non stick pan and saute\u0301 the red onion slices with a sprinkle of salt until browned and crisped. Transfer to a bowl<br \/>\n3. Add the mushrooms and saute\u0301 them until the water releases. Transfer to a bowl<br \/>\n4. Place your breads on the nonstick pan generously spreading the cheese sauce on both sides. Once the sides start browning, add the vegan cheese and let the heat allow it to melt a little<br \/>\n5. Spread your mushrooms and red onions on top with additional cheese sauce.
