{"id":18007,"date":"2023-02-10T14:23:00","date_gmt":"2023-02-10T06:23:00","guid":{"rendered":"https:\/\/resepmamiku.com\/en\/?p=18007"},"modified":"2026-03-09T20:36:09","modified_gmt":"2026-03-09T12:36:09","slug":"sausage-stuffed-acorn-squash-sarahsteffens_personalchef","status":"publish","type":"post","link":"https:\/\/resepmamiku.com\/en\/sausage-stuffed-acorn-squash-sarahsteffens_personalchef","title":{"rendered":"Sausage-stuffed Acorn Squash"},"content":{"rendered":"<h2>Ingredients<\/h2>\n<p><strong>Acorn Squash:<\/strong><br \/>\n2 acorn squashes, halved &amp; seeds removed<br \/>\nAvocado spray<br \/>\n1 teaspoon sea salt<br \/>\n<strong>Sausage Stuffing:<\/strong><br \/>\n1 tablespoon butter or ghee<br \/>\n1 medium yellow onion, peeled &amp; minced<br \/>\n2 medium garlic cloves, peeled &amp; minced<br \/>\n1 medium red bell pepper, seeded &amp; minced<br \/>\n4 medium celery stalks, ends removed &amp; diced<br \/>\n2 teaspoons sea salt<br \/>\n1 teaspoon black pepper<br \/>\n1 tablespoon dried rosemary<br \/>\n1 tablespoon dried oregano<br \/>\n1 teaspoon dried fennel seeds<br \/>\n1 teaspoon smoked paprika<br \/>\n1 pound of ground beef<br \/>\n4 cups baby spinach, chopped<br \/>\n4 tablespoons freshly grated parmesan cheese<\/p>\n<h2>Instructions<\/h2>\n<p>Preheat your oven to 375 F (190 C).<br \/>\nLine a baking tray with parchment paper and place each of the 4 halves of acorn squash on the pan.<br \/>\nSpray with avocado oil and sprinkle with sea salt and bake until the squash is tender and has begun to brown, about 40 minutes.<br \/>\nWhile the squash is baking, prepare your stuffing mixture. Add butter or ghee to a large non-stick pot and bring to medium-low heat.<br \/>\nWhen the pot is hot, add the onion and garlic and saute until it begins to soften, about 3 minutes. Stir often with a wooden spoon.<br \/>\nAdd the red bell pepper and celery and continue to saute, stirring often, for about 5 minutes. Season with sea salt, black pepper, rosemary, oregano, fennel seeds and smoked paprika.<br \/>\nAdd ground beef and break it up with a wooden spoon. Continue to cook without a lid so that excess liquids evaporate.<br \/>\nWhen the beef has browned and the veggies are very soft, turn off the heat and add the chopped baby spinach.<br \/>\nStir it together well so that the spinach wilts.<br \/>\nWhen the acorn squash is done, remove it from the oven and fill it with the beef mixture.<br \/>\nTop it with the freshly grated parmesan cheese and return it to the oven, with it set to \u201cbroil\u201d.
