{"id":17629,"date":"2023-02-08T10:01:00","date_gmt":"2023-02-08T02:01:00","guid":{"rendered":"https:\/\/resepmamiku.com\/en\/?p=17629"},"modified":"2026-03-09T20:36:34","modified_gmt":"2026-03-09T12:36:34","slug":"chicken-rice-stirwithme","status":"publish","type":"post","link":"https:\/\/resepmamiku.com\/en\/chicken-rice-stirwithme","title":{"rendered":"Chicken Rice"},"content":{"rendered":"<h2>Ingredients<\/h2>\n<p><em><strong>Chicken<\/strong><\/em><br \/>\n1 kg whole chicken<br \/>\n1 onion, quarted<br \/>\n3 garlic cloves, crushed<br \/>\n4-5 ginger slices<br \/>\n2 green onion, chopped<br \/>\n1 tbsp sesame oil (rub)<br \/>\n3-4 pandan leaves, bundled<br \/>\n1.5 L water<br \/>\nSalt and pepper<br \/>\n1 basin ice water<br \/>\n<em><strong>Rice<\/strong><\/em><br \/>\n1 1\/2 cup uncooked long grain rice<br \/>\n2 tbsp oil chicken fat<br \/>\n1 tbsp grated garlic<br \/>\n1 tbsp grated ginger<br \/>\n3-4 pandan leaves, bundled<br \/>\n2 cups chicken stock<br \/>\nSalt, Pepper, Msg<br \/>\n<em><strong>Garlic oil<\/strong><\/em><br \/>\n1\/4 cup oil<br \/>\n8-10 garlic cloves, grared<br \/>\n<em><strong>Soy sauce<\/strong><\/em><br \/>\n1 tbsp sesame oil<br \/>\n3 tbsp light soy sauce<br \/>\n1 tsp sugar<br \/>\n3 tbsp chicken stock<br \/>\n<em><strong>Chili sauce<\/strong><\/em><br \/>\n3 long chili<br \/>\n6 chili padi<br \/>\n1 tbsp sugar<br \/>\n1\/3 cup chicken stock<br \/>\n1 tbsp rice vineger<br \/>\n1 tbsp chili sauce<br \/>\n2-3 cm ginger<br \/>\n3 garlic cloves<br \/>\n1\/2-1 tsp salt<br \/>\nMsg\/stock powder<\/p>\n<h2>Steps<\/h2>\n<p>1. Trim out some chicken fat, set a side<br \/>\n2. Chicken: in a pot, bring water to a boil, Dunk the whole chicken in and out for 3-4 times before immerse into the water<br \/>\n3. Throw in salt, pepper, garlic, onion, green onion, ginger and pandan leaves, cover and cook the chicken for 10-15 mins over low heat<br \/>\n4. Off the heat and let the chicken sit in the hot water for another 25-30 mins, with the lid on<br \/>\n5. Take out chicken and immediately dunk it in the ice water for 20 min, then rub chicken with sesame oil<br \/>\n6. Strain the chicken stock, discard spices<br \/>\n7. Rice: in a pot, heat oil and render out chicken fat, stir in garlic and ginger until golden then add rice, stir for a min then add seasonings and chicken stock, bring it to a boil, add pandan leaves and cover with lid, and cook the rice for 12-15 mins, over the lowest heat.<br \/>\n8. Off the heat and let it sit for another 15 mins with the lid on<br \/>\n9. Garlic oil: heat oil, fry garlic over low flame until slightly golden and quickly remove from the heat<br \/>\n10. Chili sauce: Blend chili sauce ingredients in a blender until smooth<br \/>\n11. Mix all soy sauce ingredients in a bowl<br \/>\n12.
