Cut the potatoes and eggplants and marinate them separately with salt to taste and 0.5 tsp of turmeric 1 tsp of chilli powder each<br \/>\n2. Lightly fry the potatoes until golden brown and set aside<br \/>\n3. Lightly fry the eggplants until golden brown and set aside<br \/>\n4. In the same pan, add the red chillies and ginger to some oil<br \/>\n5. Add cumin seeds<br \/>\n6. Add 1 tsp of chilli powder and 0.5 tsp of turmeric to the oil and sau<br \/>\n7. Add water and mix<br \/>\n8. Add the potatoes and eggplants and mix<br \/>\n9. Simmer on low heat for 15-20 minutes or until potatoes are soft<br \/>\n10.
