{"id":16467,"date":"2023-01-13T08:37:00","date_gmt":"2023-01-13T00:37:00","guid":{"rendered":"https:\/\/resepmamiku.com\/en\/?p=16467"},"modified":"2026-03-09T20:37:03","modified_gmt":"2026-03-09T12:37:03","slug":"roast-lamb-katz__kitchen","status":"publish","type":"post","link":"https:\/\/resepmamiku.com\/en\/roast-lamb-katz__kitchen","title":{"rendered":"Roast Lamb"},"content":{"rendered":"<h2>Ingredients<\/h2>\n<p>1 leg of lamb (3-4kg)<br \/>\n3 onions, chopped in half<br \/>\n150mL of apple cider vinegar<br \/>\nSalt, to taste<br \/>\nOlive oil, to taste<br \/>\nSpices (detailed below)<br \/>\nWater, to taste<\/p>\n<h2>Spice Mix<\/h2>\n<p>4 bay leaves<br \/>\n1 tsp of black peppercorns<br \/>\n2 star anise<br \/>\n2 tbsp of almonds<br \/>\n4 cardamom pods<br \/>\n2 large sticks of cinnamon<br \/>\n1 mace<br \/>\n1 tbsp of cloves<br \/>\n2 tbsp of cumin seeds<br \/>\n1 tsp of fenugreek seeds<br \/>\n1 tsp of fennel seeds<br \/>\n2 tbsp of coriander seeds<\/p>\n<h2>Method<\/h2>\n<p>1. Roast the spices until golden brown and your kitchen smells wonderful<br \/>\n2. Grind the spices into a powder<br \/>\n3. Score the lamb leg on both sides<br \/>\n4. Generously rub apple cider vinegar on all sides of the lamb leg<br \/>\n5. Generously rub salt all over the lamb<br \/>\n6. Massage the spice mix all over the meat<br \/>\n7. Refrigerate the meat overnight<br \/>\n8. Sear the meat with a tiny bit of olive oil until it gets a nice golden brown colour<br \/>\n9. Place meat in baking dish with onions, cover with foil and bake at 180C for 2 hours<br \/>\n10. Once done, remove the onions and juices and add these to a blender with some extra water<br \/>\n11. Blend until smooth and reduce on a stove until desired consistency is obtained<br \/>\n12.
