Arrange thinly sliced potatoes by overlapping slightly. Season with salt &amp; pepper, sprinkle chillin flakes and thyme.<br \/>\nSpread out a layer of shallots.<br \/>\nAdd cheese, then repeat another layer of potatoes, season it and pour the heavy cream.<br \/>\nAdd more cheese on top.<br \/>\nCover with foil and bake at 400 for 30 minutes.
