{"id":15958,"date":"2022-11-24T09:04:00","date_gmt":"2022-11-24T01:04:00","guid":{"rendered":"https:\/\/resepmamiku.com\/en\/?p=15958"},"modified":"2026-03-09T20:37:46","modified_gmt":"2026-03-09T12:37:46","slug":"chicken-spinach-rosa-pasta-normasfooddiary","status":"publish","type":"post","link":"https:\/\/resepmamiku.com\/en\/chicken-spinach-rosa-pasta-normasfooddiary","title":{"rendered":"Chicken  &Amp; Spinach Rosa Pasta"},"content":{"rendered":"<h2>Ingredients<\/h2>\n<p>500g penne<br \/>\n25g butter, plus 15g for the chicken<br \/>\n1 brown onion, finely diced<br \/>\n5 cloves garlic, crushed<br \/>\n1 teaspoon chilli flakes<br \/>\n500g seasoned chicken tenderloins, cut into 1cm cubes<br \/>\n400g Mutti tomato passata<br \/>\n200g pitted kalamata olives<br \/>\n300ml thickened cream<br \/>\n1 bag baby spinach leaves 120g bag<br \/>\n2 teaspoons Italian herbs<br \/>\n1 teaspoon vegeta (more or less to taste)<br \/>\n1\u20442 cup basil leaves<\/p>\n<h2>Method<\/h2>\n<p>(Chicken I used today was leftovers from the chicken wraps I made . They were seasoned with chicken spices, paprika, Italian herbs, s&amp;p and olive oil. You could use breast if you like.)<br \/>\n1. Cook the pasta in plenty of salted water according to the packet directions, reserving some cooking water.<br \/>\n2. While the pasta is cooking, heat a very large frying pan over medium heat and add 25 grams of butter and the onion. Cook for a few minutes, till soft then add the garlic &amp; chilli, cook till fragrant and add the remaining butter and the chicken and fry until lightly browned.<br \/>\n3. Add the passata, olives and 1 ladle full of the pasta water, bring to a simmer and cover. Simmer for about 8 minutes until slightly reduced, then add the cream and spinach and stir to combine and wilt the spinach leaves.<br \/>\n4. Season with vegeta, Italian herbs, salt &amp; pepper. You may need to add more or less, taste as you go.<br \/>\n5. Add the cooked pasta to the chicken mixture along with about 2 tablespoons of pasta water. Toss to mix, then scatter with the basil leaves, finely grate parmeson cheese when serving.
