Heat oil in a pan, saute garlic and ginger until golden<br \/>\n2. brown the meat, over high medium heat<br \/>\n3. Add eggplant and sauce mixture, cover, lower the heat and simmer for 10-15 mins until the eggplant is tender and water reduce by 3\/4<br \/>\n4. Add enough cornstarch slurry to thicken the sauce, bring it to a simmer, remove and garnish with chopped scallion.<br \/>\n5.
