Add 2 tbsp of olive oil to a pan<br \/>\n2. Once the oil is hot, add the cumin seeds and onions and saute\u0301<br \/>\n3. Once the onions start turning translucent, add the garlic ginger paste<br \/>\n4. Add turmeric and chilli powder<br \/>\n5. Add 1 more tbsp of olive oil to lightly fry the onions and spices<br \/>\n6. Add in the peanut butter<br \/>\n7. Add water and salt before mixing well<br \/>\n8. Add the eggplant and cover with the spices<br \/>\n9. Simmer on low heat for 10-15 minutes, or until the eggplant is soft<br \/>\n10. Add sugar and mix this through<br \/>\n11. Garnish with fresh green chillies<br \/>\n12.
