Add the oil to a skillet. Add the diced onion, jalapeno, and poblano. Sprinkle the veggies with a little sea salt and cook for 10 minutes, stirring occasionally, then turn off the heat and set aside.<br \/>\n2. Add all the cheese in the sauce pan. pour in the half &amp; half.<br \/>\n3. Melt these cheese on low heat. stirring constantly to prevent clumps.<br \/>\n4. Once all the cheese is fully incorporated and smooth. Gently fold in the cooked onion, peppers, garlic, diced green chiles, cumin powder, chili powder, and cayenne pepper.<br \/>\n5. Taste the mixture and add sea salt to taste.<br \/>\n6.
