On a gas stove, Char eggplant on high heat until soft and blackened on all sides for 5-8mins, let cool and peel charred skin off<br \/>\n2. Gently flatten the flesh<br \/>\n3. Mix beaten egg, scallions, chili, and seasoning then dip eggplant to the mixture<br \/>\n4. Heat a tbsp of oil, saute shallots and garlic then add minced meat cook until turns color. Set a side<br \/>\n5. Heat 1\/4 cup of oil in a non stick pan, place the eggplant, then top with the minced meat and add the egg mixture in<br \/>\n6.
