In a big pot, heat 1 tbsp olive oil and cook the onion and carrot for a few minutes.<br \/>\nAdd the garlic and cook for another minute. Stir in tomatoes, salt, oregano, and chicken stock. Bring to a boil then cover and simmer for 30 minutes.<br \/>\nAdd the basil and blend using a hand blender or food processor. Mix in the cream and serve warm with grilled cheese, fresh basil and more cream.
