In a pot, Submerge oxtail in the water, blanch for 10-15 mins, drain and rinse<br \/>\n2. Heat oil in a pot, char onion, garlic, ginger first and followed by cloves, nutmeg, star-anise and cinnamon stick until fragrance<br \/>\n3. add 3 L of water, followed by oxtail, Cover with lid, cook over low heat for 2-3 hrs or until soft and tender<br \/>\n4. Remove oxtail, strain broth into another pot, discard aromatics<br \/>\n5. Simmer broth, add back the oxtail, then sugar, salt, pepper and msg and cook carrots, potatoes, until tender for 10 min<br \/>\n6. Off the heat, add tomatoes and spring onion<br \/>\n7. Cook noodle according to package<br \/>\n8.
