Combine ricotta with the honey, lemon zest and a pinch of sea salt and pepper. Mix well, cover, refrigerate. You may do this a day in advance.<br \/>\n2. Before serving, brush bread on both sides with olive oil using a paint or basting brush. Sprinkle with salt. Place on cookie sheet and place in oven to toast. Flip, when golden to toast both sides.<\/p>\n<h2>To Serve<\/h2>\n<p>Place small bowls of toasted almonds, shredded fresh mint leaves and honey or balsamic vinegar next to a larger bowl of honey whipped ricotta.<br \/>\nPlace toasted bread in a basket, and serve alongside.
