{"id":13902,"date":"2022-10-13T13:23:00","date_gmt":"2022-10-13T05:23:00","guid":{"rendered":"https:\/\/resepmamiku.com\/en\/?p=13902"},"modified":"2026-03-09T20:41:12","modified_gmt":"2026-03-09T12:41:12","slug":"pumpkin-saffron-soup-normasfooddiary","status":"publish","type":"post","link":"https:\/\/resepmamiku.com\/en\/pumpkin-saffron-soup-normasfooddiary","title":{"rendered":"Pumpkin &amp; Saffron Soup"},"content":{"rendered":"<h2>Ottolenghi Pumpkin &amp; Saffron Soup Ingredients<\/h2>\n<p>1 butternut pumpkin, cut into small cubes<br \/>\n2 onions, roughly diced<br \/>\n3 cloves garlic, crushed<br \/>\n1 potato, diced<br \/>\nOlive oil<br \/>\n1 teaspoon paprika<br \/>\n1\u20442 teaspoon Saffron threads<br \/>\n1 litre vegetable stock, I used @vegeta_australia<br \/>\nSalt &amp; pepper to taste<\/p>\n<h2>Steps<\/h2>\n<p>Put the oil into a large saucepan, for which you have a lid, and place on a medium heat.<br \/>\nAdd the onions and cook for about 12 minutes, stirring often, until soft and golden brown.<br \/>\nAdd the garlic and cook for 30 seconds, until fragrant, then add the pumpkin, potato, paprika, saffron, vegetable stock, salt and a good grind of black pepper.<br \/>\nBring to the boil on a medium-high heat, then reduce the heat to low and simmer for about 25 minutes, covered, or until the vegetables are completely soft and cooked through.<br \/>\nIf you like your soup smooth, use a blender to blitz it as much as you like.
