Strain the lentils keeping the liquid and pour liquid into a measuring jug. I was left with approx 2 cups lentil stock, add the vege oil and top with water to reach 4 cups in liquid. (31\u20443 cups if using medium grain rice)<br \/>\nAdd your rice, lentils, spices, salt and lentil stock to the pot and stir to combine. Bring to a boil then reduce to a very low heat. Put the lid on and cook till water is absorbed and rice is cooked (approx 30-35mins depending on the grain). Let sit with lid on for 5 mins before you fluff the rice.<br \/>\nIn a large pan add olive oil and saute your onions on a low\/med heat till they caramalise and become nice and golden, be patient this can take a while.<br \/>\nServe In a platter topping with the onions.
