{"id":13492,"date":"2022-10-01T11:30:00","date_gmt":"2022-10-01T03:30:00","guid":{"rendered":"https:\/\/resepmamiku.com\/en\/?p=13492"},"modified":"2026-03-09T20:42:29","modified_gmt":"2026-03-09T12:42:29","slug":"chicken-fajita-burrito-bowls-normasfooddiary","status":"publish","type":"post","link":"https:\/\/resepmamiku.com\/en\/chicken-fajita-burrito-bowls-normasfooddiary","title":{"rendered":"Chicken Fajita Burrito Bowls"},"content":{"rendered":"<h2>Chicken Fajita Burrito Bowls Ingredients<\/h2>\n<p><strong>For The Chicken you will need;<\/strong><br \/>\n1kg chicken thigh fillets, sliced into strips<br \/>\n1 lime, juiced<br \/>\nDrizzle of olive oil<br \/>\n2 garlic cloves, crushed<br \/>\n1 teaspoon paprika<br \/>\n2 teaspoon cumin<br \/>\n1 teaspoon taco seasoning<br \/>\n1\u20442 teaspoon onion powder<br \/>\n2-3 tablespoon chopped fresh coriander<br \/>\n1 red, green and yellow capsicum, sliced into strips<br \/>\nSalt &amp; pepper to taste<br \/>\n<strong>For The Rice;<\/strong><br \/>\n1 cup jasmine rice (washed really well)<br \/>\n11\u20442 cup vegetable or chicken stock<br \/>\n1 clove garlic, crushed<br \/>\n1 lime, juiced<br \/>\n2-3 tablespoons finely chopped coriander<br \/>\nSalt to taste (keep in mind the stock will have salt too)<br \/>\n<strong>For Burrito Bowl;<\/strong><br \/>\nIceberg lettuce, washed &amp; dried<br \/>\n1 can black beans, washed and drained<br \/>\n1 can sweet corn, drained<br \/>\n1\/2 a red onion, diced<br \/>\n2 avocados peeled, seeded and sliced<br \/>\nCoriander leaves to dress<\/p>\n<h2>Dressing;<\/h2>\n<p>2 tablespoons olive oil<br \/>\n2 limes, juiced<br \/>\n1-2 tablespoon finely diced coriander<br \/>\n1 cloves garlic, crushed<br \/>\n1 teaspoon brown sugar<br \/>\n1 teaspoon ground Cumin<br \/>\nSalt &amp; pepper<br \/>\n1 teaspoon red chili flakes<\/p>\n<h2>Steps<\/h2>\n<p><strong>For Chicken:<\/strong><br \/>\nIn a large bowl, combine lime juice, oil, garlic, cumin, paprika, taco seasoning, onion powder, salt, pepper &amp; coriander; mix together. Add the chicken thighs &amp; capsicum and If time allows, let marinate for 30 minutes.<br \/>\n<strong>For Rice:<\/strong><br \/>\nWhile the chicken is marinading or cooking, cook rice: Combine together the rice, chicken stock, salt &amp; garlic in a pot over high heat. Mix well and bring to a boil. Reduce heat and cover with a lid until the rice is cooked through.<br \/>\nFluff up rice with a fork and mix through lime juice and coriander.<br \/>\n<strong>Dressing:<\/strong><br \/>\nWhisk dressing ingredients together to combine.
