Cook quinoa according to packet instructions. Drain from water and rest until cooled.<br \/>\n2. In a small bowl combine extra virgin olive oil, lemons, salt, pepper and apple cider vinegar.<br \/>\n3. In a large bowl combine cooked cooled quinoa, diced capsicum and onion, finely chopped mint and parsley, chickpeas, roasted slithered almonds, cranberries, turmeric and cumin.<br \/>\n4. Add dressing (as desired) to the bowl and toss together.
