{"id":12481,"date":"2022-08-31T07:09:00","date_gmt":"2022-08-30T23:09:00","guid":{"rendered":"https:\/\/resepmamiku.com\/en\/?p=12481"},"modified":"2026-03-09T20:44:03","modified_gmt":"2026-03-09T12:44:03","slug":"grilled-zucchini-with-warm-yogurt-anexplorerskitchen","status":"publish","type":"post","link":"https:\/\/resepmamiku.com\/en\/grilled-zucchini-with-warm-yogurt-anexplorerskitchen","title":{"rendered":"Grilled Zucchini With Warm Yogurt"},"content":{"rendered":"<h2>Grilled Zucchini With Warm Yogurt Ingredients<\/h2>\n<p>4 small to medium zucchini, sliced in half<br \/>\n4 Tbs unsalted butter<br \/>\n1\u20444 tsp saffron threads, roughly crushed<br \/>\n2 1\u20442 Tbs olive oil<br \/>\n1 cup Greek yogurt<br \/>\n1 tsp cornstarch<br \/>\n2 cloves garlic, minced<br \/>\n1\u20442 tsp dried mint<br \/>\n1\u20442 tsp coriander seeds, toasted &amp; lightly crushed<br \/>\n1 handful fresh mint leaves<br \/>\n1\u20442 lemon<br \/>\nSalt and freshly ground pepper<\/p>\n<h2>Directions<\/h2>\n<p>1. Preheat grill on high.<br \/>\n2. Place butter and saffron in small saucepan over medium heat. When butter has melted, place aside to infuse flavor.<br \/>\n3. Toss zucchini with oil, 1\u20442 tsp salt and a generous grind of pepper. Place on cookie sheet in pre-heated oven at 300 for 10-15 minutes cut side up. Remove, grill cut side down a few minutes.<br \/>\n4. Make sauce: In a large bowl whisk cornflour with 3 Tbs water, add yogurt, garlic, dried mint, remaining oil and 1\u20442 tsp salt. Whisk well.<br \/>\n5. Transfer to skillet, cook stirring continuously for 10 minutes over low heat until thickened slightly. Do not boil, sauce will separate.<br \/>\n6. Pour sauce onto serving plate, top with zucchini, spoon saffron butter over the top , sprinkle with the coriander seeds and mint leaves. Squeeze lemon on top.
