Preheat your oven at 200C<br \/>\n2. In a baking tray place your vine tomatoes, roughly chopped up onion and garlic cloves. Add a generous amount of olive oil all over with your salt, pepper, curry powder and dried herbs. Using your hands distribute the olive oil and seasonings all over. Place in the oven for 25 minutes to roast or until you hear any sizzling<br \/>\n3. In a soup pot, transfer your roasted tomato, onion and garlic cloves (removing the vine leafs). Then add your vegetable stock and carrots. Let that come to a boil for 30 minutes.<br \/>\n4. In the mean time blanche your cashew nuts in a measuring cup with some hot water (just enough to cover them). Let that sit for 10 minutes, remove a little bit of the water and blitz with a hand blender until it forms into a thick cream.<br \/>\n5. Once your soup has infused and boiled, blitz everything in the pot add in your cashew cream.
