Cut onion in half, slice thinly into half round pieces. Cut pepper into long thin strips.<br \/>\n2. Melt oil in large fry pan. Add Sugar Roti Fish Nu spice packet. Saute\u0301 1 minute. Add onions, red pepper &amp; optional seeded jalapeno pepper. We left the jalapen\u0303o out as we have one delicate palate in the household. Saute\u0301 an additional 2 minutes over medium low heat. Add garlic.<br \/>\n3. Sprinkle shrimp with salt and pepper. Toss into sliced onion mixture. Saute\u0301 1 minute.4. Add coconut milk, mangoes, zest and lime juice. Stir well. Cook another few minutes until warm. Adjust with salt &amp; pepper. Top with fresh sliced green onion &amp; chopped cilantro.
