Preheat the oven to 200c (180c gas, gas mark 4) and line 2 baking trays with parchment paper.<br \/>\n2. In a large bowl cream together the butter and sugars until pale and fluffy in texture then add the egg and vanilla extract mixing together well.<br \/>\n3. Sift the flour and salt then add into the egg mixture. Mix the ingredients thoroughly until a soft dough forms.<br \/>\n4. Split the dough into walnut sized balls and roll them in the caster sugar and cinnamon mixture.<br \/>\n5. Place the balls of dough on your baking tray, leaving space for them to spread out when baking in the oven.<br \/>\n6. Place in the oven and bake for 7 minutes.
