{"id":11548,"date":"2022-07-06T07:02:00","date_gmt":"2022-07-05T23:02:00","guid":{"rendered":"https:\/\/resepmamiku.com\/en\/?p=11548"},"modified":"2026-03-09T20:45:18","modified_gmt":"2026-03-09T12:45:18","slug":"beet-hummus-sarahsteffens_personalchef","status":"publish","type":"post","link":"https:\/\/resepmamiku.com\/en\/beet-hummus-sarahsteffens_personalchef","title":{"rendered":"Beet Hummus"},"content":{"rendered":"<h2>Beet Hummus Ingredients<\/h2>\n<p>1\/4 cup avocado oil<br \/>\n2-3 medium garlic cloves, peeled &amp; minced<br \/>\n2 tsp. sea salt<br \/>\n1 Tbs. ground cumin<br \/>\nJuice &amp; zest from 1\/2 of a medium lemon<br \/>\n3 large red beets, peeled &amp; chopped<br \/>\n1\/4 cup tahini (sesame seed paste)<\/p>\n<h2>Garnish<\/h2>\n<p>2 Tbs. olive or avocado oil<br \/>\n1 Tbs. black or white sesame seeds<br \/>\nOptional: Fresh cilantro or parsley, minced<\/p>\n<h2>Instructions<\/h2>\n<p>PREHEAT oven to 400F.<br \/>\nADD avocado oil, garlic, sea salt, ground cumin, lemon juice and zest to a mixing bowl and whisk until well-combined.<br \/>\nTOSS the peeled &amp; chopped beets in the mixture until fully coated.<br \/>\nARRANGE on a baking tray lined with parchment paper.<br \/>\nROAST in the oven for 30-40 minutes, tossing at the halfway mark, until the beets are soft and caramelized.<br \/>\nREMOVE from the oven, blend in a food processor or blender with the tahini, scraping down the sides of the bowl as needed, then pour into a bowl and garnish with olive or avocado oil, sesame seeds and optional cilantro or parsley.<br \/>\n<strong>Note<\/strong>: Any beets will work in this recipe, try it with red, yellow or orange! You can save the beet greens and saute them with ghee, garlic, sea salt and black pepper for a tasty side of greens, you can also juice them!
