Cover with plastic wrap and refrigerate 1-2 hours.<br \/>\nUsing a mixer whisk the cream plus 4 tbsp butter until creamy. Store in fridge until ready to use.<br \/>\nCut the puff pastry width wise into 1\/2 an inch strips. Bake at 385F 25-30 minutes until golden.<br \/>\nAllow the puff pastry to cool, for about 1 hour.<br \/>\nSeparate 8-9 pieces of the puff pastry sticks and crumble in a bowl and save for finishing touches.<br \/>\nRoll the roulette in foil and refrigerate overnight.<br \/>\nSave about 3\/4 cup of the cream and refrigerate for finishing touches.<br \/>\nThe next morning, spread the 3\/4 cups of the cream all over the roulette.
