{"id":10811,"date":"2022-06-03T08:23:00","date_gmt":"2022-06-03T00:23:00","guid":{"rendered":"https:\/\/resepmamiku.com\/en\/?p=10811"},"modified":"2026-03-09T20:46:43","modified_gmt":"2026-03-09T12:46:43","slug":"roasted-veggie-quinoa-spicy-lemon-herb-tahini-sugar-free-mom","status":"publish","type":"post","link":"https:\/\/resepmamiku.com\/en\/roasted-veggie-quinoa-spicy-lemon-herb-tahini-sugar-free-mom","title":{"rendered":"Roasted Veggie Quinoa Spicy Lemon Herb Tahini"},"content":{"rendered":"<h2>Roasted Veggie Quinoa Bowls Ingredients<\/h2>\n<p>1 head broccoli, cut into florets<br \/>\n1 bunch asparagus, sliced<br \/>\n2 red bell peppers, sliced<br \/>\n14 oz chickpeas, rinsed, drained, and dried<br \/>\nolive or avocado oil, as needed<br \/>\n2 garlic cloves, finely minced<br \/>\n1 C quinoa<br \/>\n1\/2 tsp salt, pepper, garlic powder, marjoram, cayenne<br \/>\n2 carrots, finely grated<br \/>\n2 lemons, zested<br \/>\n1 bunch parsley, finely chopped<br \/>\n1\/2 C sliced almonds, toasted<br \/>\n1 bunch kale, chopped, drizzled with juice of 1 lemon<\/p>\n<h2>Lemon Herb Tahini<\/h2>\n<p>1\/3 C tahini<br \/>\n2 lemons, juiced<br \/>\n1 TBSP fresh ginger<br \/>\n1 clove garlic<br \/>\n1 tsp dried parsley<br \/>\n2 tsp soy sauce<br \/>\n1 TBSP sriracha<br \/>\n1 tsp maple syrup (optional)<\/p>\n<h2>Steps<\/h2>\n<p>1 Drizzle veggies and chickpeas with a small amount of oil. Toss with garlic and a little salt and pepper. Spread on 2 parchment lined baking sheets. Do not overcrowd. Bake on convection roast at 400 (or conventional oven at 425) for 18-20 minutes.<br \/>\n2 Meanwhile, add quinoa to a medium sauce pan with 2 C water and seasonings. Cook according to package. After 15 minutes, remove from heat and stir in lemon zest, carrot, parsley and almonds. Cover for 2-3 minutes.<br \/>\n3 Prepare sauce by adding all ingredients to a blender and pure\u0301eing until creamy. Add a little water to thin if desired.<br \/>\n4 Massage kale for 15-30 seconds until tender. Place kale in bowls and top with veggies and quinoa.
